  • For the salad:
  • 1 (5-ounce) package arugula
  • 1 orange, zested and segmented into bite-size pieces
  • 1 shallot, thinly sliced
  • 1 ounce manchego cheese, sliced into bite-size pieces
  • 2 tablespoons sliced almonds
  • fresh mint leaves, optional, to taste
  • For the dressing:
  • 2 tablespoons white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup or honey
  • 1/4 teaspoon kosher salt
  • 6 tablespoons olive oil
  • ground black pepper, to taste

Directions

Step 1 -Place the arugula on a large platter and top with the orange zest, the orange segments, the shallots, the manchego cheese, the sliced almonds, and the mint leaves.

Step 2 -In a medium bowl, whisk the white wine vinegar, the Dijon, the maple syrup, and the salt together.

Step 3 -Whisk the olive oil into the vinegar mixture, 1 tablespoon at a time, until a creamy dressing forms.

Step 4 -Add the ground black pepper to the dressing and whisk to combine.

Step 5 -Drizzle the dressing over the salad.

Step 6 -Serve.
