Mile High Tot Bake is high on the list of favorites for breakfast, brunch, or even dinner options. Climb your way to the top of one of the best bakes when you combine eggs, ham, green bell peppers, and crispy tater tots with some sharp cheddar cheese. Baked until golden, Mile High Tot Bake is a satisfying way to reach your peak of perfection!

Ingredients
- 2 tablespoons vegetable oil
- 1 onion, diced
- 1 green bell pepper, diced
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 cups ham, diced
- 8 large eggs
- 1/2 cup whole milk
- 8 ounces sharp cheddar cheese, shredded, divided
- 1 (32-ounce) bag frozen tater tots
- scallions, optional, to taste, sliced, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -In a 10-inch cast iron skillet over medium-high heat, add the vegetable oil.
Step 3 -Add the onion, the green bell pepper, the salt, and the black pepper to the heated vegetable oil, and cook, while stirring occasionally, until the vegetable mixture starts to soften and brown slightly, about 5 minutes.
Step 4 -Add the ham to the vegetable mixture and cook, while stirring occasionally, until the ham starts to brown, about 5-7 minutes.
Step 5 -Transfer the ham-veggie mixture from the stovetop to a wire rack and let it cool, about 3-5 minutes.
Step 6 -In a medium bowl, add the eggs and the milk and whisk to combine.
Step 7 -Add the egg mixture and 1/2 of the sharp cheddar cheese to the ham-veggie mixture and stir to combine.
Step 8 -Evenly top the egg mixture with the tater tots.
Step 9 -Bake until the eggs are almost set, about 45 minutes.
Step 10 -Transfer the casserole from the oven to a wire rack and add the remaining sharp cheddar cheese on top of the casserole.
Step 11 -Bake until fully set and the cheese on top is melted, about 5-10 minutes.
Step 12 -Transfer the casserole to the wire rack and let it cool.
Step 13 -Serve garnished with the scallions.
