Some people are under the impression that sweet potatoes can't possibly compete with russet or gold potatoes. Let Maple Bacon Sweet Potatoes put those doubts to rest. The caramel-colored cubes of sweet potatoes are the perfect complement to a sweet and sticky maple sauce, with crumbles of crunchy, savory bacon added in. Maple Bacon Sweet Potatoes prove that maybe it's regular potatoes that should be worried!

Ingredients
- 3 pounds sweet potatoes, peeled and cut into 1/2-inch cubes
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 5 slices bacon, cut into 1-inch pieces
- 1 onion, thinly sliced
- 1 cup pure maple syrup
- 1 teaspoon dried thyme, for garnish
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Line a baking sheet with foil.
Step 3 -In a bowl, add the sweet potato cubes and the vegetable oil and toss to coat.
Step 4 -Spread the sweet potatoes in a single layer on the prepared baking sheet.
Step 5 -Season the sweet potatoes with the salt and the pepper.
Step 6 -Roast the sweet potatoes, flipping them once halfway through, until tender and browned in places, about 40 minutes.
Step 7 -Transfer the sweet potatoes from the oven and loosen them from the foil if necessary.
Step 8 -In a skillet over medium heat, add the bacon and cook, while stirring, until browned, about 6-8 minutes.
Step 9 -Reduce the stovetop heat to low.
Step 10 -Add the onions to the skillet and cook until very soft, about 10-15 minutes.
Step 11 -Increase the heat to medium.
Step 12 -Add the maple syrup to the skillet and heat until it is slightly boiling.
Step 13 -Continue to boil and stir the maple syrup until the mixture foams and bubbles, about 3-4 minutes.
Step 14 -Add the roasted sweet potatoes to the glaze and mix well. Be sure to coat all of the potatoes.
Step 15 -Garnish with the thyme and serve.
