Ah the poke cake! A beloved staple of 1950s baking that has seen a resurgence of late. You can see why with this Lime Poke Cake. It's a beautifully moist cake with bursts of sweet, electrically tart lime flavoring soaked right in thanks to the lime gelatin. Frosted with a fluffy, creamy, pudding-infused topping, Lime Poke Cake is how you do culinary revivals; make them so delicious there's no talk about it being old-fashioned... only talk about seconds.

Ingredients
- For the poke cake:
- 1 (14.25-ounce) box white cake mix
- 4 large egg whites, room temperature
- 1 cup buttermilk
- 1/2 cup vegetable or canola oil
- 1 (3.4-ounce) package lime gelatin
- 1 cup boiling water plus 1/2 cup cold water, divided
- 1 (8-ounce) container frozen whipped topping, thawed
- 1 (3.4-ounce) box instant vanilla pudding mix
- Optional, for topping:
- whipped topping, to taste, thawed
- sprinkles, to taste
- fresh limes, to taste, sliced
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 9x13-inch baking dish with nonstick cooking spray.
Step 3 -In a bowl, add the cake mix, the egg whites, the buttermilk, and the oil and whisk until smooth.
Step 4 -Pour the mixture into the prepared baking dish, spreading it out evenly.
Step 5 -Bake until a toothpick inserted into the center comes out clean, about 25 minutes.
Step 6 -Transfer the cake from the oven and allow it to cool for 15 minutes.
Step 7 -In a bowl, add the lime gelatin and 1 cup of the boiling water and stir until the gelatin is dissolved, about 2 minutes.
Step 8 -Add the remaining cold water to the gelatin mixture and stir to combine.
Step 9 -Using a wooden skewer or a large fork, poke holes all over the cake, about every 1/2 inch.
Step 10 -Carefully pour the gelatin mixture over the cake.
Step 11 -Place the cake in the refrigerator for at least 3 hours and up to overnight.
Step 12 -In a mixing bowl, add 8 ounces of the whipped topping and the vanilla pudding mix and whisk until completely smooth.
Step 13 -Spread the frosting over the cake.
Step 14 -Serve topped with the extra whipped topping, the sprinkles, and the fresh lime slices.
