Ingredients
- For the chicken:
- 2 chicken breasts, boneless, skinless, and pounded to even thickness
- salt, to taste
- pepper, to taste
- For the dressing:
- 1/2 cup olive oil
- 1/4 cup rice vinegar
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 teaspoon garlic powder
- 1 teaspoon sesame oil
- 1/2 teaspoon ground ginger
- For the salad:
- 6-8 cups mixed spring greens
- 1 red pepper
- 1/3 cup edamame, shelled
- 1/2 cup mandarin oranges
- 1 cucumber, sliced
- 1 cup wonton strips
- 1/3 cup cashews
- sesame seeds, to taste
Directions
Step 1 -Season both sides of the chicken with the salt and the pepper.
Step 2 -In a greased skillet over medium heat, cook the chicken until the internal temperature reads 165 degrees F, about 5-6 minutes per side.
Step 3 -Transfer the chicken away from the heat and allow it to rest for 5 minutes prior to slicing.
Step 4 -While the chicken rests, in a bowl, whisk together the olive oil, the vinegar, the salt, the sugar, the garlic powder, the sesame oil, and the ground ginger
Step 5 -In a bowl, toss the lettuce, the red peppers, the edamame, the mandarin oranges, and the cucumbers.
Step 6 -Divide the salad between 4 plates.
Step 7 -Top the plates with an equal serving of the chicken.
Step 8 -Top the salads with the wonton strips and the cashews.
Step 9 -Drizzle the salads with the dressing and sprinkle with the sesame seeds.
Step 10 -Serve.
