This meal is so sunny, it’ll literally brighten up your evening! Lemon and Herb Salmon is bright, herbaceous, fatty, and rich, accented with the flavors from the grill. This is perfect for enjoying on warm summer evenings on the porch or for when you want a memory of those bright days in the midst of winter. Lemon and Herb Salmon is a shining sensation of seafood!

Ingredients
- 3 lemons, 1 lemon zested and juiced
- 1/4 cup extra-virgin olive oil
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1 teaspoon fresh ground black pepper
- 2 tablespoons fresh parsley leaves, chopped, plus more for garnish
- 1 tablespoon fresh oregano leaves, chopped
- 4 salmon fillets
- vegetable oil, for grilling
Directions
Step 1 -Combine the lemon zest, lemon juice, olive oil, garlic, salt, pepper, parsley, and oregano in a small bowl, mixing well.
Step 2 -Remove 2 tablespoons of the marinade and set it aside.
Step 3 -Pour the remaining marinade over the salmon fillets, ensuring each is coated on both sides.
Step 4 -Marinate the salmon in the refrigerator for 1 hour before grilling.
Step 5 -Set all the burners on your gas grill to high.
Step 6 -Cover the grill and preheat for 15 minutes.
Step 7 -While the grill is preheating, slice the remaining 2 lemons in half and brush the cut sides lightly with the vegetable oil.
Step 8 -Generously oil the grates of your grill using tongs and folded paper towels soaked in the vegetable oil.
Step 9 -Remove the salmon from the marinade and place it on the oiled grill.
Step 10 -Add the lemon halves on the grill, cut side down.
Step 11 -Leave the grill set on high and close the lid.
Step 12 -Grill until the salmon is well charred, about 6-8 minutes.
Step 13 -Remove the lemons when they are charred with nice grill marks.
Step 14 -Using tongs and a large spatula, carefully flip the salmon and continue grilling until the center is just translucent, about 1-2 minutes depending on how thick the salmon fillets are.
Step 15 -Remove the salmon and lemons from the grill and transfer to a platter.
Step 16 -Brush the hot salmon fillets with the reserved marinade.
Step 17 -Garnish with the fresh chopped parsley and serve with the grilled lemons on the side.
