Ingredients

  • 16 ounces bacon, sliced
  • 1 (15.5-ounce) can hominy
  • 6 eggs
  • 2 tablespoons milk or half-and-half
  • 4 green onions, sliced
  • 1/2 cup cheddar cheese, shredded
  • hot sauce, optional, to taste

Directions

Step 1 -In a large non-stick skillet, cook the bacon over medium-high heat until crispy, about 15 minutes.

Step 2 -Transfer the bacon to a paper-towel-lined plate and let it cool.

Step 3 -When it is cool enough to handle, crumble the bacon.

Step 4 -Drain the hominy and add it to the skillet with the leftover bacon drippings.

Step 5 -Stir and cook the hominy until lightly browned, about 3-5 minutes.

Step 6 -Add in the eggs, the milk, and the green onions and cook, stirring frequently, until the eggs are just about cooked, about 3-5 minutes.

Step 7 -Fold the cheese into the egg mixture until melted.

Step 8 -Crumble the bacon over the top of the egg mixture.
