Ingredients
- 1 pound green beans, trimmed
- 12 sprigs thyme, divided
- 2 tablespoons olive oil, divided
- 1/4 teaspoon kosher salt, plus more to taste
- 1/4 teaspoon pepper, plus more to taste
- 1/2 cup parmesan cheese, grated and divided
- 1 (14-ounce) can artichoke hearts, halved and patted very dry
- 1 1/2 pounds chicken breasts, boneless and skinless
- 1 lemon, halved
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Toss the green beans, 6 sprigs of thyme, 1 tablespoon olive oil, 1/4 teaspoon kosher salt, 1/4 teaspoon pepper, and 1/4 cup parmesan cheese together on a rimmed baking sheet.
Step 3 -Add the artichoke hearts to the baking sheet, nestling them in between the thyme and green beans.
Step 4 -Roast the vegetables on the bottom rack of the oven until golden-brown and tender, about 10-12 minutes.
Step 5 -While the vegetables are roasting, heat the remaining 1 tablespoon olive oil in a large oven-safe skillet over medium heat on the stove-top.
Step 6 -Season the chicken with salt and pepper.
Step 7 -Add the chicken to the skillet and sauté until golden-brown on the bottom, about 3-4 minutes.
Step 8 -Flip the chicken and cook for 2 additional minutes.
Step 9 -Add the lemon, cut side down, and the remaining 6 sprigs of thyme to the skillet.
Step 10 -Transfer the skillet to the oven and roast until the chicken is cooked through, reading 165 degrees F at its thickest point when inserted with a thermometer, about 9-10 minutes.
Step 11 -Remove the vegetables and chicken from the oven.
Step 12 -Toss the remaining parmesan cheese with the green beans and artichokes.
Step 13 -Plate the chicken and vegetables and serve!
