Ingredients
- For the berry salad:
- 2 cups quinoa, cooked
- 1 heaping cup blackberries
- 1 heaping cup blueberries, optional
- 1 heaping cup raspberries
- 1 cup baby spinach
- 1/2 cup fresh basil, optional, chopped
- 1/2 cup gorgonzola cheese, crumbled
- 1/2 cup sunflower seeds
- For the dressing:
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon honey
- salt, to taste
Directions
Step 1 -In a large serving bowl, add the quinoa, the blackberries, the blueberries, the raspberries, the baby spinach, the basil, the cheese, and the sunflower seeds and toss to combine.
Step 2 -In a glass measuring cup, add the oil, the lemon juice, the honey, and the salt and whisk to combine.
Step 3 -Evenly drizzle the dressing over the salad and toss to combine.
Step 4 -Serve.
