Ingredients
- 1/2 cup old-fashioned rolled oats
- 2 ice cubes
- 1 small banana, peeled and broken into 4 pieces
- 1 1/2 cups plain, unsweetened coconut milk beverage
- juice of 1/2 small lemon
- 1/2 teaspoon pure vanilla extract
- kosher salt
- 3/4 cup frozen unsweetened mango cubes
- 3/4 cup frozen unsweetened pineapple cubes
- fresh pineapple wedges, for garnish, to taste
Directions
Step 1 -Add the oats to a blender, cover, and blend to a fine powder.
Step 2 -Add the ice cubes, the banana, the coconut milk, the lemon juice, the vanilla, and the salt to the blender, cover, and blend until smooth.
Step 3 -Add the mango and the pineapple to the smoothie mixture, cover, and blend until smooth.
Step 4 -Pour the smoothie into 2 large, chilled glasses and garnish with the pineapple wedges.
Step 5 -Serve.
