Ingredients
- 1 large onion, diced
- 1 tablespoon butter
- 1 meaty ham bone
- 1 pound Yukon gold potatoes, diced and peeled
- 3 medium carrots, sliced
- 2 ribs celery, sliced
- 1 cup frozen corn, thawed
- 1 (15-ounce) can cannellini beans, drained and rinsed
- 7 cups chicken broth or water
- 2 bay leaves
- 2 sprigs fresh thyme or 1 teaspoon dried thyme leaves
- 1/4 cup fresh parsley
Directions
Step 1 -Heat a small skillet over medium heat.
Step 2 -Add the onion and the butter to the skillet and cook until slightly softened.
Step 3 -In a slow cooker, combine the onion, the ham bone, the potatoes, the carrots, the celery, the corn, the beans, the broth, the bay leaves, the thyme, and the parsley.
Step 4 -Cover the slow cooker and cook on high heat for 6 hours or on low heat for about 9-10 hours.
Step 5 -Transfer the ham bone, the bay leaves, and the thyme sprigs from the soup.
Step 6 -Pull the ham off the bone, chop it up, and add it back into the soup.
Step 7 -Stir and serve.
