Ingredients
- For the dressing:
- 1/3 cup tahini, well-stirred
- 1/4 cup rice vinegar
- 3 tablespoons fresh lemon juice
- 1/3 cup water, plus more, to taste
- 1 large clove garlic, minced
- 1/4 teaspoon sea salt
- 1/4 cup chives, chopped
- 1/3 cup fresh basil, packed
- 4 large leaves sage
- For the bowls:
- 3 cups brown rice
- 5 ounces mixed greens
- 1 (14-ounce) can black beans, drained and rinsed
- 1 cup ripe cherries, pitted and halved
- 1 pint ripe blackberries
- 1 ripe peach, pitted and sliced
- 1 avocado, sliced
- 1/2 red onion, thinly sliced
- 1/2 bunch green onion, chopped
- 1/3 cup queso fresco, crumbled
- 1/3 cup pistachios, chopped
Directions
Step 1 -Add the tahini, the rice vinegar, the lemon juice, 1/3 cup of the water, the garlic, the sea salt, the chives, the basil, and the sage leaves to a blender.
Step 2 -Blend until smooth, adding the extra water as needed to ensure it is thin enough to serve as a dressing.
Step 3 -Refrigerate the dressing until ready to use.
Step 4 -Cook the rice according to the package directions.
Step 5 -Divide the cooked rice between four large bowls.
Step 6 -Evenly distribute the mixed greens, the black beans, the cherries, the blackberries, the peach slices, the avocado, the red onion, the green onion, the queso fresco, and the pistachios among the bowls.
Step 7 -Drizzle each bowl with the dressing.
Step 8 -Serve.
