When you have a big group over for lunch then you must serve big food. Grandma was used to feeding large groups, so that's how Grandma's Famous Bologna Salad came to be! When your childhood favorite (bologna) joins forces with some hard-boiled eggs, a bit of celery, chopped onions, some sweet pickle relish, and gets mixed with a mayo-mustard combo, then you get to enjoy the old-fashioned, homestyle meal you know so well. She knows how to take care of the whole crowd's rumbling tummies thanks to Grandma's Famous Bologna Salad. It's famously delicious!

Ingredients
- 1 1/2 pounds bologna, cut into chunks
- 1 egg, hard-boiled, plus more, to taste, sliced, for serving
- 1 stalk celery, roughly chopped
- 2 teaspoons onion, finely chopped
- 2 teaspoons sweet pickle relish
- 3/4 cup mayonnaise
- 1 tablespoon yellow mustard
- salt, to taste
- black pepper, to taste
- white bread slices, to taste, for serving
Directions
Step 1 -In a food processor, add the bologna chunks, 1 of the hard-boiled eggs, the celery, and the onions and pulse until it reaches the preferred consistency. Scrape down the sides of the container about every 10 pulses to ensure it is evenly combined.
Step 2 -Add the bologna mixture to a large bowl.
Step 3 -In a medium bowl, add the relish, the mayonnaise, and the yellow mustard and stir to combine.
Step 4 -Add the mayonnaise mixture to the bologna mixture and stir to combine.
Step 5 -Taste the bologna salad and season with the salt and the black pepper, as needed. Stir to combine.
Step 6 -In a container with an airtight lid, add the bologna salad.
Step 7 -Cover the container with the lid and place it in the refrigerator. Let the bologna salad chill for at least 2 hours and up to overnight.
Step 8 -Top the bologna salad with the extra sliced hard-boiled eggs.
Step 9 -Spread the bologna salad over 1 slice of the bread and top with another slice of the bread. Repeat with the remaining bologna salad and the remaining bread slices.
Step 10 -Slice the sandwiches into triangles and serve.
