Goat Spread might just be the GOAT (greatest of all time, as the kids say) of appetizer dips! The goat cheese base is tangy and creamy and just a little sharp, so it's already a great dip to begin with, but then, this Goat Spread really pulls out all the stops. The goat cheese is covered with bright, vibrant, and sweet sun-dried tomatoes and a deliciously fragrant garlic and tomato oil! Grab all the crackers you can, because you'll want to scoop up every last bit of this dip!

Ingredients

1 (8.5-ounce) jar julienned oil-packed sun-dried tomatoes
2 cloves garlic, minced
1 (11-ounce) log fresh goat cheese
fresh parsley, optional, minced, for garnish
assorted crackers, to taste, for serving

Directions

Step 1 -Drain the tomatoes, reserving 3 tablespoons of the oil.

Step 2 -In a small skillet, heat the reserved oil, the tomatoes, and the garlic over medium-high heat and cook, stirring, until the garlic is golden and the tomatoes are heated through, about 5 minutes.

Step 3 -Place the goat cheese on a serving plate.

Step 4 -Pour the tomato mixture over the cheese.

Step 5 -Sprinkle with the parsley.

Step 6 -Serve with the crackers.
