Ingredients
- 1 pound ground beef
- 1 medium green pepper, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (10-ounce) can diced tomatoes with green chilies
- 1 (8-ounce) can tomato sauce
- 1/2 cup long grain rice
- 1 teaspoon salt
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon white pepper
- 1/4 teaspoon black pepper
- 1/4 cayenne pepper
- hot pepper sauce, to taste
- 1 small head cabbage, chopped
- 1 cup colby cheese, shredded
- fresh basil, optional, to taste, sliced, for garnish
Directions
Step 1 -In a skillet over medium heat, add the beef, the green peppers, the onions, and the garlic and cook, while crumbling the meat, until it is no longer pink, about 5-7 minutes.
Step 2 -Drain the fat from the skillet.
Step 3 -Add the tomatoes with green chilies and their juices, the tomato sauce, the rice, the salt, the dried basil, the oregano, the white pepper, the black pepper, the cayenne pepper, and the hot pepper sauce and stir to combine.
Step 4 -Spread the beef mixture into a 9x13-inch baking dish.
Step 5 -Top the beef mixture in the baking dish evenly with the cabbage and the cheese.
Step 6 -Cover the baking dish and bake until the rice is tender, about 1 hour-1 hour 15 minutes.
Step 7 -Serve garnished with the basil.
