Ingredients
- 1 large peach, pureed
- 1/4 cup soy sauce
- 3 tablespoons brown sugar
- 4 cloves garlic, pressed
- 1 tablespoon ginger, freshly grated
- 2 tablespoons cooking oil
- 3 pounds chicken thighs, bone-in
- 2 large shallots, thinly sliced
- 1 large peach, thinly sliced
- pinch of cayenne
Directions
Step 1 -Add the pureed peach, soy sauce, brown sugar, pressed garlic, cayenne, and ginger together in a small mixing bowl, whisking until combined. Set the sauce aside.
Step 2 -Preheat the oven to 375 degrees F.
Step 3 -Preheat the cast-iron skillet or oven-safe cooking pan over medium-high heat.
Step 4 -Add the cooking oil to the hot skillet.
Step 5 -Place the chicken thighs in the hot oil and sear until well browned, about 4-5 minutes per side.
Step 6 -Transfer the chicken to a plate.
Step 7 -Add the shallots and peaches to the skillet, cooking until softened, about 3 minutes.
Step 8 -Add the chicken back to the skillet, nestling it in with the shallots and peaches.
Step 9 -Spread the sauce over the chicken, shallots, and peaches.
Step 10 -Bake until the chicken is cooked through, reading 165 degrees F when inserted with a meat thermometer in the thickest part without touching bone, about 35-40 minutes.
Step 11 -Serve hot!
