Ingredients
- For the dip:
- 12 ounces hot Italian sausage links, casings removed
- 2 (8-ounce) packages cream cheese, room temperature
- 1 cup sour cream
- 4 ounces sharp cheddar cheese, grated
- 2 cups frozen sweet corn, thawed and drained
- 1 (14-ounce) can fire-roasted diced tomatoes with green chilies, undrained
- 1 (4-ounce) can diced green chiles, undrained
- 1/2 cup fresh jalapeño peppers, diced
- 1/2 cup green onions, sliced
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- cayenne pepper, to taste
- For topping:
- 2 tablespoons sharp cheddar cheese, grated
- cayenne pepper, to taste
- 1 teaspoon green onion, sliced
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Place the sausages in a dry pan over medium heat until they start to sizzle, using a spoon or flat wooden spatula to break them up.
Step 3 -Cook the sausages until they are browned and crumbly, about 10-12 minutes.
Step 4 -Transfer the sausage from the heat and drain the excess fat.
Step 5 -Combine the cream cheese, the sour cream, 4 ounces of the cheddar, the corn, the cooked sausage, the fire-roasted tomatoes with green chilies, the green chiles, the jalapeño peppers, 1/2 cup of the green onions, the salt, the pepper, and the cayenne in a large bowl, mixing until thoroughly combined.
Step 6 -Transfer the mixture to a baking dish, smoothing out the top.
Step 7 -Top the dip with the remaining cheddar and the remaining cayenne.
Step 8 -Place the baking dish on a sheet pan to catch any drippings.
Step 9 -Bake in the center of the oven until the cheese is melted and the dip is bubbling on the outside, about 30 minutes.
Step 10 -Sprinkle the remaining green onions over the top and serve.
