Ingredients
- 7 cloves garlic, minced
- 1 cup butter, softened
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons fresh thyme, finely chopped
- 2 tablespoons salt
- 1 tablespoon pepper
- 5 pounds boneless ribeye roast, trimmed
- 2 tablespoons flour
- 2 cups beef stock
- mashed potatoes, optional, for serving
- green beans, optional, for serving
Directions
Step 1 -Preheat the oven to 500 degrees F.
Step 2 -Combine the garlic, butter, rosemary, thyme, salt, and pepper in a bowl until fully mixed.
Step 3 -Rub the herb butter mixture over the entire rib roast.
Step 4 -Set the rib roast on a roasting tray with a rack.
Step 5 -Bake the roast for 5 minutes per pound of meat.
Step 6 -Turn off the heat and leave the rib roast in the oven to sit for 2 hours.
Step 7 -After 2 hours, remove the roast from the oven and from the pan.
Step 8 -Pour the pan drippings into a saucepan over medium heat.
Step 9 -Add in the flour and whisk until there are no lumps and the raw flour smell dissipates.
Step 10 -Add in the beef stock, constantly stirring and bringing the sauce to a boil.
Step 11 -Remove from heat, then strain the sauce into a gravy dish.
Step 12 -Cut the prime rib into 3/4 inch slices.
Step 13 -Serve with mashed potatoes and green beans, if desired.
