With lots of fresh veggies, plenty of chicken breast pieces, and a sprinkling of tasty pesto, this skillet is a perfect, easy meal that everyone will keep requesting. Garbage Chicken Skillet will be your any-day-favorite for dumping a delicious dinner on your table. Everyone will want to take out this garbage (and by that we mean dig in)!

Ingredients
- 2 tablespoons olive oil
- 1 1/4 pounds chicken breasts (about 3), boneless and skinless, cut into 1/2-inch-thick pieces
- 1 cup frozen green beans
- 1 red bell pepper, chopped
- 1/2 red onion, sliced
- 1 yellow squash, chopped
- 1 zucchini, chopped
- 1/3 cup pesto, store-bought or homemade, plus more, to taste
- 1/8 teaspoon salt, plus more, to taste
- 1/8 teaspoon freshly cracked black pepper, plus more, to taste
- 1 tablespoon parmesan cheese, grated
Directions
Step 1 -In a large skillet over medium-high heat, add the oil until it is very hot.
Step 2 -Add the chicken pieces to the hot oil and sauté until they are opaque, about 3-5 minutes. It is okay for the meat to not be cooked through.
Step 3 -Add the green beans to the chicken pieces and sauté until the green beans are just thawed, about 1-2 minutes.
Step 4 -Add the bell pepper and the red onion to the chicken mixture and sauté, about 1-2 minutes. If the water is beginning to pool in the skillet, slightly increase the heat so that it is hot enough for it to release from the vegetables and quickly evaporate.
Step 5 -Add the yellow squash and the zucchini to the chicken mixture and sauté until the squash slightly softens and the meat reaches an internal temperature of 165 degrees F and its juices run clear, about 2-3 minutes.
Step 6 -Turn off the stovetop heat. Add 1/3 cup of the pesto to the chicken mixture and stir until everything is evenly coated.
Step 7 -Season the chicken mixture with 1/8 teaspoon of the salt and 1/8 teaspoon of the black pepper. Taste and season with the extra salt, the extra pepper, and the extra pesto, as needed. Stir to combine.
Step 8 -Serve the chicken mixture topped with the parmesan cheese.
