Ingredients
- For the chops:
- 6 (6-8-ounce) bone-in pork chops
- kosher salt, to taste
- black pepper, to taste
- 1/4 cup light brown sugar
- 2 tablespoons smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- canola oil, to taste, for oiling the grill grates
- For the peach relish:
- 1/4 cup fresh lime juice
- 1 teaspoon honey
- 1/2 small red onion, finely chopped
- kosher salt, to taste
- 2 ripe peaches, pitted, chopped
- 1/2 cup fresh basil, thinly sliced
- lime wheels, optional, to taste, for garnish
Directions
Step 1 -Pat the pork chops dry with paper towels.
Step 2 -Season the pork chops with the salt and the black pepper.
Step 3 -In a small bowl, add the brown sugar, the paprika, the cumin, the garlic powder, and the cayenne pepper and whisk to combine.
Step 4 -Coat the pork chops evenly on both sides with the spice mixture.
Step 5 -Place the pork chops on a plate and cover them with foil.
Step 6 -Chill the seasoned pork chops in the refrigerator for 3 hours.
Step 7 -Clean and lightly oil the grates using the canola oil.
Step 8 -Preheat the grill to medium-high.
Step 9 -Add the pork chops to the hot grill and cook, turning them occasionally, until they are charred on both sides and reach an internal temperature of 145 degrees F, about 8-10 minutes.
Step 10 -Transfer the cooked pork chops to a plate and let them rest for 5 minutes.
Step 11 -In a medium bowl, add the lime juice and the honey and whisk to combine.
Step 12 -Add the onions and the salt to the honey mixture and stir to combine.
Step 13 -Let the onion mixture stand for 5 minutes.
Step 14 -Add the peaches and the basil to the onion mixture and stir to combine.
Step 15 -Top the pork chops with the peach relish.
Step 16 -Serve with the lime wheels.
