Ingredients
- For the Berry Lemon:
- 1/2 cup orange juice
- 1 1/2 cups fresh berries, of your choice
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons honey or sugar
- For the Rainbow Fruit:
- 1 cup fruit, of your choice, sliced
- 1 1/2 cups coconut water
- 2 tablespoons honey or sugar
- For the Berries and Cream:
- 1 1/2 cups fresh berries
- water, to taste
- 2 tablespoons honey or sugar
- 1 cup full-fat plain Greek yogurt
- 1/2 teaspoon vanilla extract
- For the Coconut Lime:
- 1 (14-ounce) can full-fat coconut milk
- 1/4 cup lime juice
- 2 tablespoons lime zest
- 1/4 cup honey
- For the Sneaky Spinach:
- 1 1/2 cups milk
- 1 cup fresh spinach
- 1/4 cup honey
- 2 bananas
Directions
Step 1 -For the Berry Lemon: Combine the orange juice, the berries, the lemon juice, the lemon zest, and the honey in a blender until smooth. Pour into the molds.
Step 2 -For the Rainbow Fruit: Distribute the fruit into molds. Combine the coconut water and the honey, then pour the mixture into the molds, tapping on a table or counter to remove air pockets.
Step 3 -For the Berries and Cream: Purée the berries until smooth, adding the water if needed. Stir together the yogurt, the honey, and the vanilla. Spoon the berries and the yogurt mixture into molds in alternating layers.
Step 4 -For the Coconut Lime: Stir together the coconut milk, the lime juice, the lime zest, and the honey. Pour into the molds.
Step 5 -For the Sneaky Spinach: Combine the milk, the spinach, the honey, and the bananas in a blender until smooth. Pour into the molds.
Step 6 -Insert sticks and freeze until hard, at least 4 hours. Run the mold under warm water for a few seconds to loosen, then remove the pops from the molds. Serve the popsicles straight out of the freezer and enjoy!
