Ingredients
- 1 cup white onion, finely chopped
- 1 medium jalapeño, ribs and seeds removed, finely chopped
- 1/4 cup lime juice
- 3/4 teaspoon fine sea salt, plus more, to taste
- 1 1/2 pounds ripe red tomatoes, such as Roma, core and seeds removed, chopped
- 1/2 cup fresh cilantro, finely chopped
Directions
Step 1 -In a medium bowl, add the onion, the jalapeño, the lime juice, and 3/4 teaspoon of the salt and stir to combine. Let it marinate, about 5 minutes.
Step 2 -Add the tomatoes and the cilantro to the onion mixture and stir to combine.
Step 3 -Taste the pico de gallo and season with the extra salt, as needed.
Step 4 -Tightly cover the bowl and let the pico de gallo chill, for at least 15 minutes and up to overnight.
Step 5 -Serve.
