Filled with all your favorite Tex-Mex flavors that are snuggled under a bed of crispy tater tots, this warm dish is so much fun, you'll never want to siesta! Now, we don't recommend pulling an all-nighter for Fiesta Tater Tot Bake, but we understand why you'd be tempted to. It really keeps the party going and going in the most delicious of ways!

Ingredients
- For the bake:
- 1 (28-ounce) package frozen tater tots
- 1 pound ground beef
- 1 small onion, finely diced
- 1 clove garlic, minced
- 1 (4-ounce) can diced green chiles
- 1 (1-ounce) package taco seasoning mix
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (12-ounce) package frozen corn
- 3 cups Mexican blend cheese, shredded, divided
- 1 (10-ounce) can red enchilada sauce
- Optional toppings:
- olives, to taste, sliced
- cilantro leaves, to taste
- sour cream, to taste
- tomatoes, to taste, diced
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 - Coat a 9x13-inch baking dish with cooking spray.
Step 3 -Place the tater tots on a baking sheet and bake for 10 minutes. They will not be fully cooked.
Step 4 -While the tater tots are baking, in a large skillet over medium heat, add the beef and the onion and cook, while crumbling the meat, until the beef is almost browned.
Step 5 -Add the garlic to the beef mixture and cook until the beef is no longer pink, about 1 minute. Drain the excess grease.
Step 6 -Add the green chiles and their juices, the taco seasoning mix, the black beans, the corn, and 2 cups of the cheese to the beef mixture and stir to combine.
Step 7 -Pour the beef mixture into the prepared baking dish.
Step 8 -Evenly pour the enchilada sauce over the beef mixture.
Step 9 -Arrange the tater tots in a single layer on top of the beef mixture.
Step 10 -Bake the casserole until the tater tots are crispy, about 30-40 minutes.
Step 11 -Sprinkle the remaining cheese over the casserole and bake until the cheese has melted, about 2-3 minutes.
Step 12 -Serve the casserole with your preferred optional toppings.
