  • 4 chicken breasts, boneless and skinless, fat trimmed
  • 2 teaspoons taco seasoning
  • 2 green, yellow, red, or mixed bell peppers, thinly sliced
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1/2 cup cheddar or Mexican-blend cheese, shredded
  • fresh cilantro, to taste, torn, for garnish
  • rice, cooked, optional, to taste, for serving

Directions
