Eat-Your-Broccoli Casserole helps you reach your daily serving of vegetables while being absolutely delicious! In just an hour, you'll have a dish full of tender chicken, fresh broccoli, fluffy rice, melted cheddar cheese, tangy sour cream, and savory cream of chicken soup. Broccoli is an underrated veggie and it pairs perfectly with the comfort-food yumminess of this meal. Eat-Your-Broccoli Casserole is perfect for those days when you want "healthy" food that doesn't taste healthy!

Ingredients
- For the casserole:
- 2 chicken breasts, boneless and skinless, cut into bite-size pieces
- 1 teaspoon Italian seasoning
- salt, to taste
- pepper, to taste
- 2 tablespoons butter
- 2 1/2 cups chicken broth
- 1 tablespoon olive oil
- 1 1/4 cups white long-grain rice
- 2 cups fresh broccoli florets
- 1 (10.5-ounce) can condensed cream of chicken soup
- 1/2 cup milk
- 1/2 cup sour cream
- 2 cups cheddar cheese, shredded, divided
- For the topping:
- 1 cup buttery crackers, crushed
- 2 tablespoons butter, melted
Directions
Step 1 -Preheat the oven to 305 degrees F.
Step 2 -Lightly grease a 9x13-inch baking dish.
Step 3 -Season the chicken with the Italian seasoning, the salt, and the pepper.
Step 4 -In a large pot over medium heat, melt 2 tablespoons of the butter.
Step 5 -Add the chicken to the melted butter and cook until golden-brown on all sides, about 5 minutes. Transfer the cooked chicken from the pot.
Step 6 -In the same pot, add the chicken broth, the olive oil, and the rice and bring to a boil.
Step 7 -Reduce the heat of the rice mixture to a simmer, cover tightly, and cook for 6 minutes.
Step 8 -Add the broccoli to the rice mixture and replace the lid.
Step 9 -Cook the rice mixture for 9 minutes. Refrain from stirring.
Step 10 -Turn off the stovetop heat, leaving the lid on, and let the rice stand for 10 minutes. Refrain from stirring.
Step 11 -Add the browned chicken, the cream of chicken soup, the milk, the sour cream, and 1/2 of the cheddar cheese to the rice mixture.
Step 12 -Add the chicken mixture to the prepared baking dish.
Step 13 -Cover the casserole with foil and bake for 15 minutes.
Step 14 -While the casserole is baking, combine the crackers and the remaining melted butter in a bowl.
Step 15 -Carefully top the casserole with the cracker mixture and the remaining cheese and bake, uncovered, until light brown and bubbly, about 10 minutes.
Step 16 -Let the casserole rest for 5 minutes.
Step 17 -Serve.
