Juicy, savory, seasoned chicken breasts are braised in a luxurious cream sauce infused with sharp parmesan and bright sun-dried tomatoes for that extra Italian kick. A little spinach wilted in the warm sauce adds just a touch of garden freshness, too! Easy Tuscan Chicken is amazing served over pasta, potatoes, or just eaten on its own! Ingredients
- For the chicken:
- 4 chicken breast halves, boneless and skinless
- 1/2 teaspoon salt
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon paprika
- 1/8 teaspoon black pepper
- 1 tablespoon canola oil
- For the cream sauce:
- 1 cup heavy cream
- 2 teaspoons garlic, minced
- 1 teaspoon cornstarch
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/3 cup sun-dried tomatoes, chopped
- 1/4 cup parmesan cheese, shredded
- 1/2 cup fresh spinach, chopped
- pasta or potatoes, optional, to taste, cooked and warm, for serving
- fresh basil, optional, to taste, chopped, for garnish
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Place the chicken breasts on a cutting board and cover them with a piece of plastic wrap.
Step 3 -Using a rolling pin, a smooth meat mallet, or a small frying pan, flatten the thicker side of the chicken so that it is more of an even thickness.
Step 4 -Place the chicken breasts in a 9x13-inch baking dish.
Step 5 -Combine 1/2 teaspoon of the salt, the Italian seasoning, the paprika, and 1/8 teaspoon of the pepper.
Step 6 -Drizzle the chicken with the oil and rub it with the seasoning mixture.
Step 7 -Whisk together the heavy cream, the garlic, the cornstarch, the remaining salt, and the remaining pepper until combined.
Step 8 -Add the sun-dried tomatoes and the parmesan cheese into the sauce mixture.
Step 9 -Pour the sauce around the chicken in the baking dish.
Step 10 -Bake until the chicken reaches 165 degrees F internally in the thickest part of the meat, about 16-20 minutes.
Step 11 -Stir the spinach into the sauce.
Step 12 -Cover the pan and allow the chicken to rest until the spinach wilts, about 10 minutes.
Step 13 -Spoon the chicken and the sauce over the warm pasta.
Step 14 -Garnish with the fresh basil and serve.
