Ingredients
- For the peanut noodles and chicken:
- 1/3 cup smooth peanut butter, preferably natural-style
- 2 tablespoons sriracha
- 2 tablespoons brown sugar
- 2 tablespoons lime juice
- 1 tablespoon soy sauce
- 1 clove garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 (13.5-ounce) can coconut milk
- 1 tablespoon olive oil
- 1 chicken breast, boneless and skinless, cut into 1-inch-thick pieces
- 8 ounces egg noodles, can substitute fettuccine
- Optional garnishes:
- 1/4 cup peanuts, chopped
- 1/4 cup cilantro, chopped
- lime wedges, to taste
Directions
Step 1 -In a medium bowl, add the peanut butter, the sriracha, the brown sugar, the lime juice, the soy sauce, the garlic, and the ginger and whisk to combine.
Step 2 -Add the coconut milk to the peanut sauce and whisk until it is smooth.
Step 3 -In a large skillet over medium-high heat, add the oil.
Step 4 -Swirl the skillet to coat the bottom with the hot oil. Add the chicken pieces and cook, stirring occasionally, until they reach an internal temperature of 165 degrees F, their juices run clear, and they have browned on all sides.
Step 5 -Add the peanut sauce to the chicken pieces, then reduce the heat to medium-low. Stir to loosen any of the browned bits from the bottom of the skillet.
Step 6 -Reduce the heat to low and simmer the chicken in the sauce, stirring occasionally.
Step 7 -While the chicken and the sauce simmer, in a pot of salted, boiling water, cook the noodles to al dente, according to the package directions. Drain.
Step 8 -Add the cooked noodles to the chicken and the sauce and toss until they are evenly coated in the sauce.
Step 9 -Serve the chicken mixture, garnished with the peanuts, the cilantro, and the lime wedges.
