Ingredients
- 6 large eggs
- 1/4 cup whole milk
- 1/4 cup ham, cooked and diced
- 1/4 cup green pepper, diced
- 2 tablespoons chives, chopped
- 1/2 cup Mexican blend cheese, shredded
- 4 English muffins, toasted and buttered, for serving
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Spray a half sheet pan with nonstick cooking spray.
Step 3 -In a medium bowl, whisk the eggs and the milk together until well-combined, about 2 minutes.
Step 4 -Pour the egg mixture into the sheet pan and top with the ham, the peppers, and the chives.
Step 5 -Bake the egg mixture until set and warmed all the way through, about 11 minutes.
Step 6 -Transfer from the oven and evenly sprinkle the shredded cheese on top.
Step 7 -Bake the egg mixture until the cheese melts, about 2 minutes.
Step 8 -Transfer the egg mixture from the oven and cut it into squares.
Step 9 -Serve the egg squares sandwiched between the English muffins.
