Ingredients
- 3/4 cup sliced almonds
- 2 cups all-purpose flour, spooned and leveled
- 1/4 teaspoon plus 1/8 teaspoon salt
- 1 cup unsalted butter, partially softened
- 1 1/2 cups confectioners' sugar, divided
- 1 1/2 teaspoons vanilla extract
- 1 cup mini chocolate chips
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Place the almonds in a food processor and process until tiny bits are formed. Set it aside.
Step 3 -In a bowl, add the flour and the salt and whisk to combine.
Step 4 -In the bowl of a stand mixer fitted with the paddle attachment, add the butter and 1/2 cup of the confectioners' sugar until it is just blended and slightly creamy.
Step 5 -Add the vanilla to the butter mixture and mix to combine.
Step 6 -Reduce the mixer speed to low and slowly add the flour mixture to the butter mixture until it is just combined.
Step 7 -Add the chocolate chips and the processed almonds to the cookie dough and mix until they are evenly distributed, folding with a spatula as needed.
Step 8 -Scoop the dough into balls that equal about 1 tablespoon and place them on an ungreased cookie sheet, fitting about 16 per sheet and evenly spacing them apart.
Step 9 -Bake the cookies until the bottoms are lightly golden-brown, about 12 minutes.
Step 10 -Let the cookies rest on the baking sheet until they are cool enough to handle.
Step 11 -Pour the remaining confectioners' sugar in a small mixing bowl.
Step 12 -Dip and roll the baked cookies in the confectioners' sugar to lightly coat them, then transfer them to a wire rack to cool completely. Repeat the baking and coating processes until all of the cookie dough has been used.
Step 13 -Roll the cooled cookies in the powdered sugar a second time, giving them a thicker coating.
Step 14 -Serve.
