Classic Chicken Enchiladas

Preheat the oven to 350 degrees F.
Grease a 9x13-inch baking dish.
Using a large skillet, heat the oil over medium-high heat.
Add in the onion and sauté until it is soft, about 3 minutes.
Add in the diced chicken and the green chiles.
Season the mixture generously with salt and pepper.
Continue cooking the mixture until the chicken is completely cooked through at 165 degrees F, about 6-8 minutes.
Add the beans to the mixture.
Remove the pan from the heat and cover. Set it aside.
Create an assembly line on a clean surface.
Lay out a tortilla.
Spread 2 tablespoons of the enchilada sauce evenly and completely on the tortilla.
Add a large scoop of the chicken filling mixture to the tortilla.
Add 1/3 cup of the cheese.
Roll up the tortilla.
Add the rolled-up tortillas in a single layer into the prepared baking dish.
Repeat the tortilla filling and rolling process using the remaining ingredients. Use an additional baking dish if needed.
Once all the enchiladas are formed, cover all of them with the remaining sauce and cheese.
Bake the dish uncovered until the enchiladas are cooked through and the cheese is bubbly, about 25-35 minutes.
Sprinkle with your favorite toppings, then serve!
