Ingredients
- 1/2 cup prepared pesto, divided
- 4 (6-ounce) chicken breast halves, boneless and skinless, pounded to 1/4-inch thickness
- 1 (16-ounce) carton fresh mushrooms, sliced, divided
- 4 slices reduced-fat provolone cheese, halved, divided
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 15x10-inch baking dish with nonstick cooking spray.
Step 3 -Spread 1/4 cup of the pesto evenly over the chicken halves.
Step 4 -Coarsely chop 1/2 of the sliced mushrooms and set them aside. Scatter the remaining sliced mushrooms into the bottom of the prepared baking dish.
Step 5 -Top each of the chicken halves with 1/4 of the reserved chopped mushrooms and 1 of the cheese slice halves.
Step 6 -Roll up each of the chicken halves, starting with the short side, and secure them with toothpicks.
Step 7 -Place the rolled chicken halves seam-side down on top of the sliced mushrooms in the baking dish.
Step 8 -Cover the baking dish with foil and bake the chicken halves until they reach an internal temperature of 165 degrees F, about 25-30 minutes.
Step 9 -Switch the oven to the broil setting.
Step 10 -Discard the foil and top the chicken halves evenly with the remaining pesto and the remaining cheese slice halves.
Step 11 -Broil the chicken halves until the cheese has melted and is golden-brown, about 3-5 minutes.
Step 12 -Remove and discard the toothpicks.
Step 13 -Serve.
