Ingredients

  • 3 cups egg noodles, uncooked
  • 1 onion, finely diced
  • 1/3 cup red bell pepper, diced
  • 3 tablespoons butter
  • 1/2 teaspoon seasoning salt
  • 1 teaspoon chili powder
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 1/3 cups milk
  • 3 cups sharp cheddar cheese, shredded and divided
  • 1/3 cup parmesan cheese, shredded
  • 3 cups chicken, cooked
  • 4 ounces mild green chiles or green olives, of your preference

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Cook the pasta to al dente according to package directions.

Step 3 -Cook the onion and red bell pepper in the butter until tender, about 5 minutes.

Step 4 -Stir in the salt and chili powder.

Step 5 -In a large bowl, combine the soup, sauteed onion mixture, milk, 2 cups of the cheddar cheese and the parmesan cheese, mixing well.

Step 6 -Stir in the chicken, pasta and green chiles or olives.

Step 7 -Spread the mixture into a 9x13-inch casserole dish. Top with the remaining cheddar cheese.

Step 8 -Bake until hot and bubbly, about 30-35 minutes.

Step 9 -Serve hot.
