Ingredients
- For the potatoes and chicken:
- 2 pounds red potatoes, chopped into 1-inch cubes
- 3 chicken breasts, cubed
- salt, to taste
- pepper, to taste
- For the sauce:
- 1/2 cup ranch dressing, store-bought or homemade
- 1/2 cup sour cream
- 3/4 cup cheddar cheese, shredded
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dill
- 1/2 teaspoon parsley
- For the topping:
- 8 slices bacon, cooked, crisp, and crumbled
- 4 green onions, thinly sliced and divided
- 3/4 cup cheddar cheese, shredded
Directions
Step 1 -Preheat the oven to 175 degrees F.
Step 2 -Grease a 9x13-inch casserole dish.
Step 3 -Cook the potatoes in a large pot of boiling, salted water until tender, about 10-15 minutes. Drain and set aside.
Step 4 -Place the chicken on a cutting board and season with salt and pepper.
Step 5 -Cook the chicken in a pan on the stove-top over medium until cooked through and no longer pink, registering 165 degrees F when measured internally, about 8-10 minutes.
Step 6 -Combine the ranch, sour cream, 3/4 cup of the cheese, the pepper, the garlic powder, the dill, and the parsley in a mixing bowl.
Step 7 -Add the cooked chicken and potatoes to the prepared casserole dish.
Step 8 -Sprinkle the bacon over the top of the chicken and potatoes.
Step 9 -Sprinkle 1/2 of the chopped green onions over the top of the casserole dish.
Step 10 -Spread the sauce evenly over the mixture in the dish.
Step 11 -Finish by sprinkling the remaining 3/4 cup of the cheese over the contents.
Step 12 -Bake the dish until the cheese is bubbling and the top has a golden brown color, about 35 minutes.
Step 13 -Remove the dish from the oven and garnish with the remaining green onions.
Step 14 -Serve warm.
