Ingredients
- For the nachos:
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 1/4 cup water
- 1 (15-ounce) can refried beans
- 16 ounces tortilla chips
- 4 cups cheddar cheese, shredded
- Optional toppings:
- 1/2 cup sour cream
- 1/2 cup guacamole
- 1/3 cup olives, sliced
- 1/2 cup refrigerated salsa
- 1/3 cup cilantro, roughly chopped
- 1/4 cup jalapeños, sliced or pickled
- 1/4 cup red onion, diced
- 1/4 cup green onions, sliced
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line an 18x26-inch baking sheet with parchment paper.
Step 3 -In a large skillet over medium-high heat, add the ground beef and cook, while crumbling, until the meat is no longer pink, about 5-7 minutes.
Step 4 -Drain the excess grease and return the cooked ground beef to the skillet.
Step 5 -Add the taco seasoning to the ground beef and cook, stirring frequently, until fragrant and incorporated, about 1 minute-1 minute 30 seconds.
Step 6 -Add the water and the refried beans to the ground beef mixture and cook, stirring frequently, until heated through.
Step 7 -Keep the beef mixture warm.
Step 8 -Evenly spread the tortilla chips on the bottom of the prepared baking sheet.
Step 9 -Sprinkle 2 cups of the cheddar cheese over the tortilla chip layer.
Step 10 -Dot the ground beef mixture over the top of the cheddar cheese layer, aiming for an even layer for optimal coverage.
Step 11 -Evenly sprinkle the remaining cheddar cheese over the top of the beef layer.
Step 12 -Bake, uncovered, until the cheese is fully melted, about 5-7 minutes.
Step 13 -Transfer the nacho mixture from the oven to a wire rack.
Step 14 -Serve with your favorite toppings.
