- 1/2 medium ripe avocado, mashed
- 4 slices whole-wheat bread, toasted
- 1 medium tomato, sliced
- 2 tablespoons shallot, finely chopped
- 1/4 cup hummus
Directions
Step 1 -Spread the mashed avocado evenly over 2 slices of the toast.
Step 2 -Top the mashed avocado with an even amount of the tomato slices and the shallots.
Step 3 -Spread the hummus evenly over the remaining 2 slices of the toast.
Step 4 -Close the sandwiches and serve.
