Phew, it's been a day. So many errands, so many needs, so much to do, in so little time. Ah, but don't forget, you have to eat! Busy Day Casserole is here to save you some of those precious minutes and make sure you tackle your tasks with a full belly. We can promise with one bite of this cheesy, potato-y, spicy Italian sausage bake, all the stressors and worries will pretty much disappear. All you have to do is cook the juicy sausage and tenderize the meat and then you pile all the hearty ingredients into a baking dish to let the oven to the rest of the hard work. No sweat! Kick back and relax or finish those last-minute things you wanted to get to--Busy Day Casserole has dinner covered!

Ingredients
- butter, to taste
- 1 pound Italian sausage meat, casings removed
- 1 cup onions, diced
- 1 (10.5-ounce) can condensed cream of mushroom soup
- 1/2 cup milk
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon Italian seasoning
- 2 pounds russet potatoes, thinly sliced
- 2 cups mozzarella and cheddar cheese blend, shredded
- 1/3 cup green onions, chopped
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a 9x13-inch baking dish with cooking spray.
Step 3 -In a large skillet over medium heat, melt the butter.
Step 4 -Add the sausage and the onions to the melted butter and cook, while crumbling, until the sausage and the onions are browned, about 5-7 minutes.
Step 5 -Transfer the skillet from the heat.
Step 6 -In a mixing bowl, add the cream of mushroom soup, the milk, the sour cream, the salt, the pepper, and the Italian seasoning and whisk until well combined.
Step 7 -Evenly place 1/2 of the potatoes in the bottom of the prepared baking dish.
Step 8 -Spread 1/2 of the soup mixture over the potatoes.
Step 9 -Sprinkle 1/2 of the sausage mixture over the soup mixture.
Step 10 -Sprinkle 1 cup of the cheese over the sausage mixture.
Step 11 -Repeat the layers once, ending with the remaining cheese.
Step 12 -Bake, covered with foil, for 50 minutes.
Step 13 -Carefully discard the foil from the dish and bake until the cheese is melted and golden, about 15 minutes.
Step 14 -Transfer the casserole from the oven and allow it to stand for about 5 minutes.
Step 15 -Sprinkle the chopped green onions on top and serve.
