Ingredients
- 2 1/2 pounds gold potatoes, chopped into large pieces
- 6 tablespoons butter
- 3/4 cup buttermilk
- salt, to taste
- pepper, to taste
- chives, to taste
Directions
Step 1 -In a large pot of salted boiling water, cook the potatoes until very tender, about 20 minutes.
Step 2 -Drain the potatoes and, once cool enough to handle, peel them.
Step 3 -While the potatoes are cooking, in a small saucepan over medium heat, add the butter and cook, whisking as it melts, until it is browned but not burnt. Transfer it away from the heat.
Step 4 -Mash the peeled potatoes with the buttermilk, the salt, the pepper, and 1/2 of the browned butter.
Step 5 -Arrange the mashed potatoes in a serving bowl, add the remaining browned butter, and garnish with the chives.
Step 6 -Serve.
