- 2 teaspoons baking powder
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1 cup blueberries
- 1 1/2 cups whipping cream
- For the blueberry sauce:
- 2 cups blueberries, divided
- 1/3 cup sugar
- 2 tablespoons water
- 1 teaspoon vanilla
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Line a baking sheet with parchment paper.
Step 3 -In a large bowl, thoroughly mix 2 cups of the flour, the baking powder, 2 tablespoons of the sugar, the salt, and the nutmeg.
Step 4 -Toss 1 cup of the blueberries with the flour mixture.
Step 5 -Stir the whipping cream into the flour mixture until just moistened.
Step 6 -Using the extra flour, dust a work surface.
Step 7 -Turn the dough out onto the floured worksurface and gently lift and fold it about five times, making a quarter turn between each fold.
Step 8 -Place the dough on the prepared baking sheet and form it into a 7-8-inch square, about 1-inch-thick.
Step 9 -Using the extra flour, lightly flour a pizza cutter or a knife.
Step 10 -Using the prepared cutting tool, cut the dough into 12-16 squares, but leave them close together.
Step 11 -Bake in the upper half of the oven until golden-brown, about 17-20 minutes.
Step 12 -While the biscuits bake, combine 1 cup of the blueberries, the remaining sugar, and the water in a medium saucepan.
Step 13 -Place the saucepan on the stove-top and heat until simmering, cooking and stirring until the berries pop and the sauce has thickened.
Step 14 -Transfer the saucepan from the heat and stir in the vanilla and the remaining berries.
Step 15 -Cut or pull apart the biscuits.
Step 16 -Serve the biscuits warm with the blueberry sauce.
