Besto Pesto Chicken is the best way to curb your craving for an impeccable, homecooked meal when you're on a time schedule. Plump, juicy chicken is drenched in a full-flavored basil pesto sauce, baked until tender, and topped with juicy tomatoes and loads of melted mozzarella cheese. Add any sides you'd like, and Besto Pesto Chicken becomes fine dining... but in half the time and cost (and in the comfort of your own space). You can't go wrong with this one. Ingredients
- 4 chicken breast halves, boneless and skinless
- 1/2 cup basil pesto, store-bought or homemade
- 1 cup mozzarella cheese, shredded
- 3 plum tomatoes, sliced
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Line an 18x26-inch baking sheet with aluminum foil, then coat the foil with nonstick cooking spray.
Step 3 -In a large bowl, add the chicken halves and the basil pesto and toss well to coat.
Step 4 -Add the coated chicken to the bottom of the prepared baking sheet and bake until they reach an internal temperature of 165 degrees F and the juice runs clear, about 35 minutes.
Step 5 -Place the baking dish on a wire rack and top each of the chicken halves with 1/4 of the mozzarella cheese and 2-3 slices of the tomato.
Step 6 -Bake the chicken halves until the cheese has melted, about 5-7 minutes.
Step 7 -Serve.
