Fresh, crisp cabbage and iceberg lettuce are topped with chicken, carrots, green onions, and mandarin oranges for that special kick. Chow mein noodles, crispy wonton strips, sliced almonds, and toasted sesame seeds are sprinkled on top for added crunch, then drizzled with a dressing that's so good you'll want to sing its praises. Ingredients
- For the dressing:
- 2 tablespoons rice vinegar
- 2 tablespoons hoisin sauce
- 2 tablespoons peanut oil, can substitute canola or avocado oil
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon peanut butter
- 3/4 teaspoon toasted sesame seed oil
- 1/2 teaspoon ground ginger
- For the salad:
- 4 cups napa cabbage, chopped
- 3 cups iceberg lettuce, chopped
- 2 1/2 cups chicken breasts, boneless and skinless, cooked and cut into bite-size pieces
- 1 cup carrots, julienned
- 1 (11-ounce) can mandarin oranges, drained and patted dry
- 1/3 cup green onions, diced
- 1/2 cup chow mein noodles
- 1/2 cup crispy wonton strips
- 1/4 cup almonds, sliced
- 2 tablespoons sesame seeds, toasted
Directions
Step 1 -In a jar with a lid, add the rice vinegar, the hoisin sauce, the peanut oil, the soy sauce, the honey, the garlic, the peanut butter, the sesame seed oil, and the ground ginger and shake until it is well-combined.
Step 2 -Cover the jar and refrigerate the dressing until ready to serve.
Step 3 -In a salad bowl, arrange the cabbage and the lettuce and drizzle with 1/3 of the dressing.
Step 4 -Add the chicken pieces, the carrots, the mandarin oranges, and the green onions to the top of the cabbage-lettuce mixture and drizzle with 1/3 of the dressing.
Step 5 -Sprinkle the salad with the chow mein noodles, the wonton strips, the almonds, and the sesame seeds.
Step 6 -Serve the salad with the remaining dressing.
