Ingredients
- 2 cups all-purpose flour
- 1 teaspoon kosher salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 stick butter, melted
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 3 large bananas, mashed
- 1/2 cup Greek yogurt
- 1 cup walnuts, toasted and roughly chopped
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line two muffin tins with paper or foil liners.
Step 3 -In a large bowl, add the flour, the salt, the baking powder, the baking soda, and the cinnamon and whisk to combine.
Step 4 -In another large bowl, add the melted butter, the granulated sugar, and the brown sugar and whisk to combine.
Step 5 -Add the egg and the vanilla extract to the butter mixture and whisk until combined.
Step 6 -Add the mashed bananas and the Greek yogurt to the butter mixture and stir to combine.
Step 7 -Add the flour mixture to the banana mixture and stir until just combined.
Step 8 -Add the walnuts to the banana mixture and fold to combine.
Step 9 -Evenly transfer the batter into the muffin tin cups, filling them about 3/4 of the way full.
Step 10 -Bake the muffins until a toothpick inserted into the middle comes out clean, about 18-20 minutes.
Step 11 -Serve.
