Ingredients
- For the poppyseed ranch dressing:
- 1 clove garlic, peeled
- 1/8 teaspoon sea salt
- 1/2 cup plain Greek yogurt or sour cream
- 1/4 cup of buttermilk
- 1/4 cup mayonnaise
- 1/2 teaspoon lemon juice or white vinegar
- 1 teaspoon poppyseeds
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried dill
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/8 teaspoon black pepper
- For the salad:
- 4 ounces fresh baby spinach, washed and dried
- 1/2 cup broccoli, chopped
- 1/4 cup blueberries
- 4 tablespoons dried cranberries
- 1/2 ripe avocado
- 1/4 cup feta cheese, crumbled
- 4 tablespoons roasted sunflower seeds
- black pepper, optional, to taste
Directions
Step 1 -Place the garlic clove in a small bowl and smash it into a paste.
Step 2 -Season the garlic paste with the salt.
Step 3 -In a large bowl, combine the garlic paste, the plain Greek yogurt, the buttermilk, the mayonnaise, the lemon juice, the poppyseeds, the parsley, the dill, the onion powder, the paprika, the garlic powder, and 1/8 teaspoon of the black pepper and whisk it well.
Step 4 -Cover the bowl and refrigerate the dressing for at least 2 hours and up to overnight.
Step 5 -In a serving bowl, add the spinach, the broccoli, the blueberries, the dried cranberries, the avocado, the feta cheese, the sunflower seeds, and the black pepper.
Step 6 -Pour the dressing over the salad and toss to combine.
Step 7 -Serve.
