Ingredients
- For the beef:
- 7 Thai bird's eye chilies
- 10 cloves garlic, peeled and whole
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 1/2 pounds lean ground beef
- 1 teaspoon granulated sugar
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon fish sauce
- 2 teaspoons dark soy sauce
- 1 1/2 cups Thai basil, chopped
- Optional, for serving:
- Thai basil, to taste, chopped
- Thai bird's eye chilies, to taste, sliced
- white rice, to taste, cooked and hot
- eggs, to taste, fried and hot
Directions
Step 1 -With a mortar and pestle or in the container of a food processor, add 7 of the Thai bird's eye chilies and 10 cloves of the peeled garlic and crush or process them into a paste.
Step 2 -In a large wok over high heat, add the vegetable oil.
Step 3 -Add the chili-garlic paste to the heated vegetable oil and stir to combine, about 20 seconds.
Step 4 -Add the bell peppers to the chili-garlic paste and sauté until the bell peppers start to soften, about 2-3 minutes.
Step 5 -Add the ground beef to the bell pepper-chili paste mixture and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes.
Step 6 -Add the granulated sugar, the soy sauce, the oyster sauce, the fish sauce, and the soy sauce to the ground beef mixture and cook, while stirring constantly, until heated through, about 1-2 minutes.
Step 7 -Add 1 1/2 cups of the Thai basil to the ground beef mixture and quickly fold to combine.
Step 8 -Immediately transfer the wok from the stovetop to a wire rack.
Step 9 -Garnish the beef mixture with the extra Thai basil and the extra sliced chilies.
Step 10 -Serve the beef mixture over the white rice and top with the fried eggs.
