There's some saying about how eating apples every day will keep you from going to the doctor... well, we have found the loophole, because they never specified what kind of apple you have to eat. Say we eat these Apple Blondies once a day. Do you think their crispy, caramel-y goodness that's packed with apples (of course) would do the trick? Surely that sticky, maple-y glaze drizzled on top is just what the doctor ordered. We guess the only way to find out is to experiment with these Apple Blondies. See ya, later doc! Ingredients
- For the blondies:
- 1 1/3 cups brown sugar, packed
- 1/2 cup butter, melted and cooled
- 1/2 cup maple syrup
- 2 teaspoons vanilla extract
- 2 large eggs, room temperature
- 2 cups all-purpose flour
- 3/4 teaspoon salt
- 1/4 teaspoon baking soda
- 3 medium apples, such as Honeygold, peeled and chopped
- For the glaze:
- 1/4 cup butter, cubed
- 1/2 cup maple syrup
- 1/4 cup brown sugar, packed
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line a 13x9-inch baking pan with parchment paper, letting the ends extend up the sides.
Step 3 -In a large bowl, add 1 1/3 cups of the brown sugar, 1/2 cup of the melted butter, 1/2 cup of the maple syrup, and the vanilla and beat with an electric hand mixer until it is blended.
Step 4 -Add the eggs, 1 at a time, to the batter mixture and beat well after each addition.
Step 5 -In a second bowl, add the flour, the salt, and the baking soda and whisk to combine.
Step 6 -Gradually beat the flour mixture into the batter mixture. Stir in the apples.
Step 7 -Pour the batter into the prepared pan and bake until the top is golden-brown and a toothpick inserted into the center comes out with moist crumbs, about 25-30 minutes.
Step 8 -While the blondies bake, in a small saucepan over medium-low heat, melt the remaining butter.
Step 9 -Stir the remaining maple syrup and the remaining brown sugar into the melted butter.
Step 10 -Bring the glaze mixture to a boil over medium heat and cook, while stirring, until it has slightly thickened, about 2-3 minutes.
Step 11 -Transfer the saucepan from the heat and let the glaze cool slightly.
Step 12 -Transfer the baking pan to a wire rack and pour the glaze over the blondies. Let them rest until they have cooled completely.
Step 13 -Cut into bars and serve.
