Ingredients
- 1 (1-pound) pork tenderloin
- 1 ounce dried mushrooms, soaked in water, chopped
- 3 cups fresh kale or spinach
- 4 ounces goat cheese, crumbled
- 2 tablespoons jarred sun-dried tomatoes in oil
- 2 cloves garlic, whole or minced
- 1/4 cup pine nuts
- 1 teaspoon rosemary, minced
- 1 teaspoon thyme leaves, minced
- 1 lemon, zested
- salt, to taste
- pepper, to taste
- 1/2 cup refrigerated pesto
- 2 tablespoons oil
- 1 tablespoon honey
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Cutting from end to end, lengthwise, slice a deep slit in the tenderloin without going all of the way through. Open it like a book and pound it out as flat as possible.
Step 3 -In a bowl, add the mushrooms, the kale, the goat cheese, the sun-dried tomatoes, the garlic, the pine nuts, the rosemary, the thyme leaves, the lemon zest, the salt, the pepper, and the pesto and stir to combine.
Step 4 -Spread the kale mixture over the pounded tenderloin and re-roll it. Use kitchen string to tightly tie it in 4 sections to keep it secure.
Step 5 -In an oven-safe heavy skillet over medium heat, add the oil and the honey until it is browning, but not burnt.
Step 6 -Add the stuffed tenderloin to the oil mixture and brown on all sides.
Step 7 -Transfer the skillet to the oven and bake the tenderloin until it reaches an internal temperature of 145 degrees, about 10 minutes.
Step 8 -Slice and serve.
