Ingredients
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup yellow onion, chopped
- 1 tablespoon Italian seasoning
- 3/4 teaspoon salt
- 3/4 teaspoon dried thyme
- 1/4 teaspoon fresh ground black pepper
- 8 cups broth, chicken, beef, or vegetable
- 3-4 cups vegetables, of your choice, fresh, frozen, or canned, chopped
- 1 medium potato, peeled and chopped
- 1 bay leaf
- 1 (6-ounce) can tomato paste
- 1 (14-ounce) can diced tomatoes, undrained
- 1 cup alphabet pasta
Directions
Step 1 -In a 5-quart pot or Dutch oven over medium heat, heat the olive oil.
Step 2 -Add the garlic, the onion, the Italian seasoning, the salt, the thyme, and the pepper to the hot oil.
Step 3 -Stir and cook the onion mixture until softened, about 5 minutes.
Step 4 -Add the broth, the vegetables, the potato, the bay leaf, the tomato paste, and the diced tomatoes to the pot and bring the mixture to a boil.
Step 5 -Add the pasta to the soup mixture.
Step 6 -Cover the pot and allow the soup to simmer for 30 minutes.
Step 7 -Remove and discard the bay leaf.
Step 8 -Serve.
