- 1 (1.5-pound) bag Yukon gold yellow potatoes
- 1/2 cup ranch dressing, divided
- salt, to taste
- pepper, to taste
- 2 pounds chicken breasts, skinless and boneless, cut into 1-inch cubes
- 1 cup bacon, cooked and crumbled
- 2 cups Mexican cheese blend, shredded
- 1/2 cup green onion, diced
Directions
Step 1 -Preheat the oven to 450 degrees F.
Step 2 -Grease a 9x13-inch baking dish with oil spray.
Step 3 -In a large bowl, mix the potatoes with the ranch and season them with the salt and the pepper.
Step 4 -Transfer the potatoes to the prepared baking dish.
Step 5 -Bake, stirring halfway through, until the potatoes are cooked through.
Step 6 -While the potatoes are cooking, mix the chicken with the remaining ranch and allow it to marinate until the potatoes are finished.
Step 7 -Place the marinated chicken on top of the baked potatoes and cover with foil.
Step 8 -Bake until the chicken reaches 165 degrees F internally, about 20 minutes.
Step 9 -Top the cooked chicken with the bacon, the cheese, and the green onions.
Step 10 -Bake, uncovered, until the cheese has melted and is bubbly, about 10 minutes.
Step 11 -Serve.
