Ingredients
- 4 bacon strips, finely chopped
- 1 1/2 pounds turkey breast tenderloins, cut into 1-inch pieces
- 4 medium carrots, sliced
- 2 small onions, quartered
- 2 celery ribs, sliced
- 1 bay leaf
- 1/4 teaspoon dried rosemary, crushed
- 2 cups water, divided
- 1 (14.5-ounce) can reduced-sodium chicken broth
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup reduced-fat biscuit/baking mix
- 1/3 cup plus 1 tablespoon fat-free milk
- parsley, optional, to taste, chopped, for garnish
Directions
Step 1 -In a Dutch oven over medium heat, add the bacon and cook, stirring occasionally, until crisp, about 5-8 minutes.
Step 2 -Transfer the bacon with a slotted spoon to paper towels to drain.
Step 3 -Reserve 2 teaspoons of the drippings in the pot, discarding the rest.
Step 4 -In the drippings over medium-high heat, add the turkey and cook, breaking it up with a wooden spoon, until it is no longer pink, about 5-7 minutes.
Step 5 -Add the carrots, the onions, the celery, the bay leaf, the rosemary, 1 3/4 cups of the water, and the broth and bring the mixture to a boil.
Step 6 -Reduce the heat to low and simmer the mixture, covered, until the vegetables are tender, about 20-30 minutes.
Step 7 -In a small bowl, add the flour and the remaining water and mix until smooth.
Step 8 -Stir the flour mixture into the turkey mixture.
Step 9 -Bring the stew mixture to a boil and cook, while stirring, until thickened, about 2 minutes.
Step 10 -Remove and discard the bay leaf.
Step 11 -Stir in the salt, the pepper, and the bacon.
Step 12 -In a small bowl, add the biscuit mix and the milk and mix until a soft dough forms.
Step 13 -Drop 6 mounds of the dough on top of the simmering stew.
Step 14 -Cover the pot and simmer until a toothpick inserted into the dumplings comes out clean, about 15 minutes.
Step 15 -Serve garnished with the parsley.
