Ingredients
- 1 pound ground sausage
- 1 small white onion, diced
- 1 green bell pepper, diced
- 2 teaspoons garlic, minced
- 2 tablespoons taco seasoning
- 1 cup salsa
- 1 (15-ounce) can black beans, rinsed and drained
- 1 cup frozen corn
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 12 large eggs
- 1/3 cup milk
- 8 corn tortillas, cut into quarters
- 2 cups Mexican-style cheese, shredded
- tomatoes, to taste, diced, for topping
- cilantro, to taste, chopped, for garnish
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Coat a 9x13-inch baking dish with nonstick cooking spray.
Step 3 -In a large skillet over medium heat, add the sausage and cook, while crumbling, until it is no longer pink.
Step 4 -Transfer the cooked sausage to a bowl. Reserve 2 tablespoons of the grease in the skillet and drain the rest.
Step 5 -Add the onions and the bell peppers to the grease in the skillet and sauté until they are soft, about 5-6 minutes.
Step 6 -Add the garlic to the onion mixture and cook until it is fragrant, about 1 minute.
Step 7 -Stir the cooked sausage, the taco seasoning, the salsa, the black beans, and the corn into the onion mixture and cook until it is heated through and combined.
Step 8 -Transfer the skillet from the heat.
Step 9 -In a medium bowl, add the salt, the pepper, the eggs, and the milk and whisk to combine.
Step 10 -In the bottom of the prepared baking dish, evenly layer 1/2 of the tortilla pieces, then evenly top with 1/2 of the sausage mixture, 1/2 of the egg mixture, and 1/2 of the cheese. Repeat the layers once.
Step 11 -Bake the sausage bake until the center is set, about 45-55 minutes.
Step 12 -Transfer sausage bake from the heat and let it rest, about 10-15 minutes.
Step 13 -Serve the sausage bake topped with the tomatoes and the cilantro.
