Well, that's Pierogi Casserole for ya and after one bite, you'll be convinced there's no other way to make it. Not only do you get to enjoy the delightfulness of the fantastic four already mentioned, but there's also a creaminess and savory-ness that can't be beaten. Pierogi Casserole is definitely the most tasty, iconic twist on an international take there ever was!

Ingredients
- 1 cup onion, finely chopped
- 1/4 cup butter, cubed
- 2 cups 4% cottage cheese, drained
- 1 large egg
- 1/4 teaspoon onion salt
- 2 cups mashed potatoes, with milk and butter added
- 1 cup cheddar cheese, shredded and divided
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 9 lasagna noodles, cooked and drained
- chives, optional, to taste, chopped
- sour cream, optional, to taste
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 13x9-inch baking dish.
Step 3 -In a skillet, sauté the onion in the butter until it is tender.
Step 4 -In a bowl, combine the cottage cheese, the egg, and the onion salt.
Step 5 -In another bowl, combine the mashed potatoes, 1/2 cup of the cheese, the salt, and the pepper.
Step 6 -Place 3 of the noodles in the prepared baking dish.
Step 7 -Top the noodles with the cottage cheese mixture and 3 more of the noodles.
Step 8 -Top the noodles with the potato mixture, then the remaining noodles, and the sautéed onions.
Step 9 -Top the onions with the remaining cheese.
Step 10 -Cover and bake until the casserole is heated through, about 25-30 minutes.
Step 11 -Let the casserole stand for 10 minutes.
Step 12 -Sprinkle the casserole with the chives and serve with the sour cream.
